This herb-infused rocks drink is fresh, cooling, and thirst-quenching, perfect for day drinking.
- 1 English hothouse cucumber
- 5 kaffir lime leaves or four 2-inch strips lime zest
- 1 ounces fresh lime juice
Using a vegetable peeler, shave 4 long, thin ribbons from cucumber; set aside. Cut a 4" piece from remaining cucumber and coarsely chop. Muddle with kaffir lime leaves, sugar, and 2 lemon slices in a cocktail shaker. Add gin and lime juice and fill shaker with ice. Cover and shake until outside of shaker is frosty, about 20 seconds.
Strain into 2 ice-filled Collins glasses. Top off each with club soda. Gently stir to combine; garnish each with 2 reserved cucumber ribbons and remaining lemon slices.

It might seem like we’re quite the lush pair here at Minimalist Baker, but that really isn’t the case. We simply enjoy a quality cocktail every now and again, especially when it’s light, delicious and easy to make. This cucumber cooler is no exception.
When my boss was in town a few weeks ago, we all went out for drinks. It was the perfect evening really. Late summer, still warm enough to forgo a jacket, the service was spot-on, the live music was the best I’ve ever heard in Wichita, and the cocktails? Rather a dream.
John ordered a drink featuring cucumber slices and after one sip, I was quickly regretting my pinot noir. In fact, every time he turned to talk to my boss, I’d sneak sips. Rather sneaky, I am.
This recipe is as simple as it gets: gin, lime, mint, cucumber and tonic water. Even the novice bartender can throw this together at the amazement of onlooking guests. Plus, it’s easy to modify to suit each person’s taste, allowing you to please even the pickiest of palettes. For example, John prefers sour, I prefer sweet – bring on the sugar.
In just a few minutes we had a lovely cocktail on our hands. And it seemed the longer we sipped on it the better it became as the flavors were given more time to marry.
What does it taste like? A sophisticated limeade. An upgraded mojito. Cucumber water on steroids. Just try it, you will love.
1. Garden Fresh Gin and Tonic
Take your regular gin and tonic up a notch by adding lemon, lime, and cucumber slices to the mix. A few fresh fruits can give just enough flavor to this classically demure drink.
- ¼ lemon, sliced
- ¼ lime sliced
- 4 cucumber slices
- 2 ounces gin
- Tonic water
- In a chilled glass, add the lemon slices, lime slices, cucumber slices, and gin.
- Top with tonic water and stir.

Cucumber Cooler Cocktail Recipe
A cooler is usually a sweet, fruity, sometimes bubbly cocktail, especially in the summer. A cooler will be light and crisp, and sometimes have less alcohol than other cocktails.

What is the Difference Between a Cooler and and Spritzer?
A cooler is different from a spritzer because a spritzer usually has sparkling water with wine or sparkling wine, and drier than a cooler. Spritzer has a tendency to be less complex than a cooler as well.
When it starts to get really warm and summery , there is nothing better than a really refreshing cocktail. In comes the Cucumber Cooler. Coolers are a classic cocktail category, which is not quite as simple to define.I defined a spritzer above, but Coolers are different!
Commonly coolers consist of soda or other carbonated liquids such as tonic water or ginger ale. They also have a spirit and then herbs or fruit.
In the cocktail book Recipes for Mixed Drinks (1917), Hugo R. Ensslin lists variations of Coolers, which have only the of carbonated liquid and a spirit in common with each other. In some there is citrus juice, others can have sodas, ginger beer, club soda.
How do You Muddle Cucumber?
Place the cucumber slices in the shaker, along with any fresh herbs and other ingredients that require muddling. Press the muddler gently into the cucumber slices while rotating your wrist. This will break it up the best.
This Cucumber Cooler features the flavors of cucumber, but also mint, grapefruit and the floral and herbal tones of gin along with fresh lime juice. We also added some Suze, which is a vegetal liqueur, with some citrus flavors added in, which was perfect for this cocktail!
Cucumber slices: You may want to eat them out of your drink right away, (because, hot summer and all) but don&rsquot do it! After a little time swimming in the lime juice, gin, and tonic , they seem to pickle ever so slightly, stay crisp, and are a great end of drink treat!
What Gin is Good with Cucumber?
Adding cucumber to your gin cocktails brings a fresh sometimes floral note, and so it typically goes with fresh, smooth and summery gins. Hendrick&rsquos is a great choice, any London Dry, or 135 East Gin!

This refreshing Watermelon Cucumber Gin and Tonic is the stuff summer cocktail dreams are made of! Fresh Watermelon pureed then put in a pitcher with lime juice, gin, sliced cucumber, mint and tonic water for that fizzy touch &ndash the perfect light sip.
- 8 cups cubed seedless watermelon
- 4 oz . fresh lime juice
- 1 cup gin
- 1 cup thinly sliced cucumber
- 1 tablespoon agave
- 1/2 cup mint leaves
- 1 cup of tonic water (optional)
- To a blender add watermelon. Process until smooth and there are no more chunks.
- Strain watermelon through a sieve or a fine strainer into a pitcher discard solids.
- Pour mixture into a large pitcher. Add Gin, lime juice, agave and mint. Stir.
- Serve over ice. Garnish with cucumber slices and lime slices. Top with tonic water.

Make Cucumber, Coriander & Thyme Simple Syrup
Making a cucumber simple syrup is probably the most complicated thing about this recipe and it’s super easy.
Simply bring equal parts water and sugar to the boil, turn down the heat, add some chopped cucumber, whole coriander seeds and a couple of sprigs of thyme and leave on a low simmer until the sugar has dissolved in the liquid.
Leave to cool and steep for 10 minutes before straining.

Notes: To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.
