Before moving on to the proper cooking instructions, I will tell you that in the recipe from which I was inspired there was something I did not like. Excessive amount of baking powder (2 teaspoons topped with only 250 grams of flour). In addition, it is recommended to add another teaspoon of baking soda. Instead, eggs were added whole. Let's say that the excess additives compensated to some extent the effort made in the preparation. I chose to beat the egg whites, completely removed the baking soda and reduced the baking powder to just 1 teaspoon. I just can't stand it in large quantities, I feel its taste in any dish.

1. Turn on the oven, set it at 100 ° C and put in the oven a saucepan with hot water.

2. In a large bowl, mix the flour, sugar and baking powder (picture 1).

3. Blackberries or blueberries, if you have frozen ones, do not defrost them before adding them to the dough. The pancakes will stain very hard, so keep them cold (picture 2).

4. Beat the egg whites together with the salt powder. Beat the yolks a little with a fork and dilute with the poured milk little by little. In the middle of the flour in the bowl, make a hole and pour the milk with the yolks. Add the vanilla extract, melted butter and whipped egg whites (picture 3).

5. Mix the dough with a spatula, lifting the composition from the bottom to the surrounding surface, without turning in a circle and in no case with the mixer. You have to get a fairly strong dough, compared to the pancake dough we are used to, and with a frothy consistency (picture 4).

6. Just before baking the pancakes, add the chopped blackberries lightly with a knife. If blueberries or smaller fruits are used, there is no need to cut them (picture 5). Mix the blackberries in the dough briefly, without insisting (picture 6).

I insist that the dough should not be mixed excessively, because in this case the pancakes would not be airy at all, frothy, but would become heavy and sticky.

Cooking pancakes

Heat a frying pan over medium heat. Add a little butter and pour a grated Polish of dough right in the middle of the pan. With the back of the polish, the dough is quickly given a circular shape, with a diameter between 12-15 cm. This is the typical size for American pancakes.

Soon, air bubbles will begin to form on the surface of the pancakes. Follow until a few bubbles form towards the center of the pancake, which will break in turn. It's time to turn the pancakes on the other side.

Fry in the pan for another minute, until golden, then transfer to the oven tray.

Keep in the oven until serving, but not more than 15-25 minutes. These American pancakes are served sprinkled with maple syrup or melted honey.

Hello dear lusts. Today I prepared fluffy Pancakes WITH GREEK YOGHURT. They are prepared quickly, and at the end we receive some extraordinarily delicious, fluffy and airy pancakes. You can serve them with cream, honey, jam, jam or whatever you want. I hope you like this recipe and prepare it with pleasure. I wish you to continue to have a tasty day and good appetite!

Ingredient:

  • 350 gr. - 10% Greek yogurt
  • 100 gr. - flour
  • 3 eggs
  • 1 teaspoon & # 8211 vanilla essence
  • 2 teaspoons - baking powder
  • 2 tablespoons - sunflower oil

Method of preparation:

  1. Put the Greek yogurt in a bowl, break the eggs on top, pour the vanilla essence, the oil and mix with a whisk.
  2. Then add the flour and baking powder and mix a little more until you have no lumps.
  3. Heat a frying pan over low heat, grease it with a little oil and form pancakes of the desired size. Fry them on one side for 4-5 minutes and on the other side for a minute or two.
  4. Serve the pancakes with honey, jam, fruit, berries or nuts. Good appetite!

American pancakes - step by step recipe

American pancakes are thicker and fluffier than the classic, thin ones we are used to. And they are made very simple.

ingredients

30 g melted butter
130 g flour
2 tablespoons sugar
1 teaspoon with a pinch of baking powder
240 ml of milk
1 egg tied
a pinch of salt
pancake frying oil

Method of preparation

1 - Mix the flour, sugar, salt and baking powder in a bowl.

2 - In another bowl, mix the melted butter (not hot) with the milk and egg. After laying the egg, beat the composition a little with the aim to homogenize well.

3 - Pour the dry ingredients (flour mixture) over the liquid ones and mix them a little to mix, do not mix too much.

4 - Heat the non-stick pancake pan well and grease it with a little oil (for a fine grease use a cooking brush soaked in oil).

For a pancake pour 2-3 tablespoons of dough (or you can use a small polish) without spreading the dough on the entire surface of the pan as in classic pancakes. You can use the back of the spoon to place / stretch the dough a little to have a round shape.

Fry the pancake until its surface begins to bubble, and a few have broken. Then turn it carefully with a thin spatula, leave it on this side until it browns. Both sides should be slightly browned.

Keep the pancakes in a bowl covered with aluminum foil until you finish the composition to keep them warm. Serve hot with the desired toppings.

Whipped milk version: In step 1, 1/2 teaspoon of baking soda is added to the dry ingredients mixture, and in step 2, replace the milk with whipped milk.

Yogurt variant: In step 1, 1/2 teaspoon of baking soda is added to the dry ingredients mixture. In step 2, replace the milk with 2/3 (170 g) cup of plain low-fat yogurt and 1/3 cup (80 ml) of milk.

Pancake ingredient:
2 eggs
1 teaspoon sugar
1/4 teaspoon salt
200 ml of milk
150 ml Greek yogurt (I used Olympus 2%)
150-190 gr of flour (depending on the size of the eggs and how fat the yogurt is)
10 gr baking powder (one sachet)
1 teaspoon coconut oil

Preparing pancakes:
1. In the blender bowl, mix the egg with the sugar and salt until it foams.
2. Separately, using a whisk, mix the milk with the yogurt so that you get a homogeneous mass.
3. Combine the egg mixture with the milk and yogurt mixture.
4. Add the flour gradually, chewing carefully.
5. Incorporate coconut oil.
6. Heat a pancake pan greased with an oil brush and pour a spoonful of dough into it. Fry the American pancakes with yogurt over medium to low heat and when no more bubbles form on the surface of the pancake, it is ready to turn on the other side.

Tips: You can prepare the composition in the evening and in the morning add only baking powder. After 5 minutes, start frying the pancakes as is. You will save time and have a delicious breakfast as well.

We served the American pancakes with organic peanut butter and honey and because it was a beautiful May morning and the garden was in bloom, we decorated them with jasmine buds and roses.
